Homemade Apple Pie

Note before beginning: Choose either second crust or crumble topping as top of pie (requires different instructions).

HOMEMADE CRUST
1-1/2 cups all-purpose flour
2 teaspoons white sugar
1 teaspoon salt
1/2 cup vegetable oil
2 tablespoons milk
  1. Preheat oven to 400F. 
  2. Put all ingredients  in 9-inch pie pan and stir together with a fork. Pat mixture into bottom and up the sides of the pan, poking holes in the bottom and sides of the crust. 
  3. Bake for 15 minutes or until light brown. 
Time-saver Tip: Save time and buy Pillsbury Refrigerated Pie Crust, includes 2 rolled-up crusts in each box. 

CRUMBLE TOPPING
1 cup all-purpose flour
1/2 cup sugar
1/4 cup (packed) golden brown sugar
1-1/2 teaspoon ground cinnamon
1/2 teaspoon salt
6 tablespoons chilled, unsalted butter cut into 1/2 inch cubes 

FILLING
6 cups thinly sliced, peeled apples (6 medium apples)
3/4 cup sugar
2 tablespoons all-purpose flour
3/4 teaspoons ground cinnamon
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
1 tablespoon lemon juice 

BAKING THE PIE
  1. In large bowl, gently mix filling ingredients and spoon into crust-lined pan. Place second crust (or crumble topping) on top of filling, pressing both crusts together at the edge of the pan to create a seal. Cut slits, shapes, or create a lattice pattern in top crust. If using second crust, lightly brush crust with one egg before placing into oven. 
  2. Bake for 40-45 minutes or until apples are tender and crust is golden brown. Cover edges of crust with 2-3 inch wide strips of aluminum foil after the first 15-20 minutes of baking to prevent excess browning of crust. 
  3. Let pie cool on cooling rack for at least 2 hours before serving.
